Several studies have indicated that amounts of acrylamide in potato products can be reduced by frying at lower temperatures. Assuming that cooking potato products at lower temperatures resulted in a decrease of acrylamide levels by 35%, the researchers were able to show that this reduction in acrylamide levels would result in a lowering of overall acrylamide intake in the Netherlands by ca. 13%. Reductions in the levels of other foods were also investigated; however, the resulting decreases in total acrylamide intake were minimal. Another way to reduce acrylamide intake could be to advise consumers to avoid certain foods. However, many of the foods that contain acrylamide are dietary staples and signi cantly contribute to nutrient intake. Petersen and Tran (78) looked at the macronutrient and micronutrient contributions of those foods reported to contain acrylamide by the 2003 US FDA acrylamide exposure assessment (79). They were able to show that those foods identi ed as containing acrylamide contributed 38% of the total daily energy intake and 36% of the total daily intake of ber. Similarly high contributions were observed for micronutrients, with those foods that contain acrylamide contributing over 30% of the total daily intake of some micronutrients such as iron, selenium, and vitamin C. For these reasons, the advice from the WHO and governments around the world remains that consumers should not make changes to their diet in order to reduce acrylamide intake.
